Quinoa line

Carmela quinoa,
from an Italian supply chain.

A sweet quinoa variety, conventional and organic, for processing companies.

The variety

Carmela

Carmela is a variety of quinoa (Chenopodium quinoa Willd.) grown in Italy, characterised by a white-beige grain with an indicative size ranging from 1.8 to 2.5 mm.

As a sweet quinoa variety, it is distinguished by its low saponin content. Saponins are compounds naturally present on the surface of the seed and responsible for its characteristic bitter taste.

Thanks to its characteristics, Carmela quinoa is a versatile raw material for food processing companies, suitable for a range of applications, from grain sales to the production of flours and ingredients for the food industry.

Typical properties

One seed,
many uses.

Quinoa is a pseudocereal: it is not a grass like wheat or rice, but a plant of the amaranth family, native to the Andes, whose seeds are used.

The seeds are coated with saponins, which give a bitter taste and must be removed during processing in traditional varieties; sweet varieties such as Carmela naturally contain few of them.

The grain has a light texture and a delicate flavour, and lends itself both to sale as whole grain and to milling into flours and to the preparation of ingredients.

From a nutritional point of view, quinoa stands out for its balanced amino acid profile: it contains all nine essential amino acids, including lysine, which is generally present only in limited amounts in traditional cereals.
